
Roasted Spiced Cauliflower.
Jax Hamilton gave me some of her dukkah from her cooking demonstration on Saturday so I decided to make this cauliflower and it was yum. Serves 4-6 as a side
1/2 cauli cut into florets
1/4 cup olive oil
1/4 cup dukkah
1/2 cup breadcrumbs
S&P
Put the cauliflower into a bowl or bag and coat with the olive oil. Toss in the dukkah, breadcrumbs (I used fresh but panko would work as well) and season. Throw into a roasting pan and roast for 30 at 200c (fan). The crumbs are just so moreish.
Jax Hazelnut Chipotle Dukkah:
1/3 cup hazelnuts
1/4 cup sesame seeds
1 1/2 Tbsp Coriander seeds
1 Tbsp cumin seeds
Pinch salt
Pop all the seeds in small, nonstick frypan, place over a medium heat and toss in the pan until the sesame seeds are golden. Allow to cool then pop in blender with the hazelnuts until you have a coarse crumb (or a mortar & pestle). Add the salt & pour into a jar. Will keep up to a month in the fridge.
