Water buffalo dairy herds are extremely common in many parts of the world and have roamed for centuries; a large amount of mozzarella cheese in Italy is made from buffalo milk.Lucy Appleton & Christo Keijzer brought the core of the dairy herd over several years ago and have been building it up on their farm ever since.
Lucy, who studied cheese making in Italy, makes Buffalo Mozzarella, halloumi, ricotta & yogurt. During winter months Wairiri Buffalo will attend every 1st & 3rd Saturday.
