Brocolli bLue Cheese soup

Autumn is the perfect time for growing and purchasing broccoli and this recipe is the perfect dish to cook. No need to worry about food wastage with this recipe! Feel free to use the whole brocolli and celery. After a bit of sautéing and a bit of stirring and you have one of the most delicious soups you will ever erv.

METHOD

  1. Saute the onions and celery. Just sweat them, you don’t want to add any colour.

  2. Add the chopped broccoli and saute this together for another 2-3 minutes.

  3. Add the water and a pinch of salt and a grind of fresh black pepper

  4. Simmer this for 25 minutes

  5. Crumble in the blue cheese and simmer again on low for 15 minutes.

  6. With a stick blender puree all together

  7. Finally add the cream and check seasonng, add more salt or pepper to taste.

  8. Simmer for 5 more minutes

  9. Serve wih toaster bread for mopping up the last morsels.

Food waste reduction tip: You can use all the brocolli for the soup, and celery leaves to garnish

INGREDIENTS

  • 2 Tbsp oil

  • 2 sticks of celery - chopped

  • 1 onion - roughly chopped

  • 1.5 broccoli heads - chopped

  • 30g blue cheese

  • 2.5 L water

  • 500ml cream
