Broccoli and blue cheese soup
METHOD
Saute the onions and celery. Just sweat them, you don’t want to add any colour.
Add the chopped broccoli and saute this together for another 2-3 minutes.
Add the water and a pinch of salt and a grind of fresh black pepper
Simmer this for 25 minutes
Crumble in the blue cheese and simmer again on low for 15 minutes.
With a stick blender puree all together
Finally add the cream and check seasonng, add more salt or pepper to taste.
Simmer for 5 more minutes
Serve wih toaster bread for mopping up the last morsels.
Food waste reduction tip: You can use all the brocolli for the soup, and celery leaves to garnish

2 Tbsp oil
2 sticks of celery - chopped
1 onion - roughly chopped
1.5 broccoli heads - chopped
30g blue cheese
2.5 L water
500ml cream
